After qualifying in 1984 at VILLA DELLE ROSE catering college in the Campagne region of Italy, Giovanni began working at the prestigious 5 star Torre Olive Hotel situated in the Gulf of Policastro.
He moved to Edinburgh in 1985 where he worked at Cosmo restaurant in Castle Street until 1990. He then moved to take the position of Head Chef at San Marco Restaurant.
